It’s Pumpkin Pie, except mini-style!
And they are just so darn cute.
I just took a regular recipe for the pie filling, made a simple gingersnap crust with gingersnaps, butter, and sugar, and made these pies in muffin cups. Be sure to butter the pan well, so that the pies come out easily!
