Pumpkin Pie Minis

It’s Pumpkin Pie, except mini-style!

This was the perfect way to hit that pumpkin pie spot and still have room for JONATHAN’S APPLE PIE and TRIPLE CHOCOLATE MOUSSE CAKE!

And they are just so darn cute.

 

 

I just took a regular recipe for the pie filling, made a simple gingersnap crust with gingersnaps, butter, and sugar, and made these pies in muffin cups.  Be sure to butter the pan well, so that the pies come out easily!
