Halloween Monster Cupcakes

These delicious lil monsters are a spin off one of my personal favorites – Reese’s Peanut Butter Cups.  Believe me, these double chocolate chip peanut butter cupcakes will blow your mind!  I mean, come on now, chocolate and peanut butter?  Can’t go wrong with that <3.

Recipe: Peanut Butter Frosting

Summary: Deadly.

Ingredients

  • ½ cup confectioners’ sugar
  • ½ cup brown sugar
  • 1 cup creamy peanut butter
  • 5 tablespoons unsalted butter, at room temperature
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/3 cup heavy cream or milk
  • Splash of rum

Instructions

  1. Combine confectioners’ sugar, brown sugar, peanut butter, butter, vanilla, rum, and salt into a bowl. Beat on medium-low speed with an electric mixer until creamy. Add the cream/milk and beat until the mixture is light and fluffy. Add the butter. Mix well.

These cupcakes are so fun, festive, and yummy.  I decorated mine with some chocolate chunks, marshmallows, and candy corn.

Definitely brought some Halloween cheer to my week!  I took some to work and shared the rest with my buddies visiting from California :).
